Black bean soup

Ingredients
- 1 yellow onion
- 1 can (15 oz) black beans
- 1.5 oz tomato paste
- 4 tbsp vegetable stock concentrate
- 1/2 cup cheddar cheese
- 2 tsp oil
- 1 3/4 cup water
- salt
- blue corn chips
- smoked paprika
- sour cream
- garlic powder
- cumin
- chili powder
Directions
- Prep: Wash and dry produce.
- Halve, peel, and finely dice onion.
- Drain beans over a small bowl, reserving liquid.
- Heat a large drizzle of oil in a large pot over medium-high heat. Add onion; cook, stirring, until softened, 3-4 minutes.
- Add garlic powder, cumin, and chili powder; stir until fragrant, 30 seconds.
- Stir in tomato paste and smoked paprika; cook until slightly darkened in color, 1 minute.
- Stir 1¾ cups water, stock concentrate, beans, and ¼ cup reserved bean liquid into pot.
- Bring to a boil and cook, stirring occasionally, until thickened, 5-8 minutes.
- Taste and season with salt and pepper. Turn off heat.
- Serve topped with cheese, crushed chips, and sour cream.
